ÖTZAL MOUNTAIN BREAD

Truly outstanding culinary pleasures are guaranteed. The Rudigier Bakery has created a made to measure Ötztal Mountain Bread which is offered at the following partner businesses:

The ultimate recipe for baking your own mountain bread:

 

  • 86 decagrams wheat flour (Type W 600)
  • 106 decagrams rye flour (Type W2500)
  • 21 decagrams wheat flour (Type W 700)
  • 30 decagrams sour dough (from the bakery)
  • 1 decagrams salt
  • 1 decagrams bread spice
  • 5 decagrams fresh yeast
  • 190 decagrams water

Slowly you knead all ingredients together for the dough, then let the dough stand for half an hour. Afterwards you form a loaf and let it stand again for 15 minutes. Prick the loaf with a knitting needle before you put it in the preheated oven at 230°C (convection oven). Bake it for some 50 minutes.
 
Special tip: put a cup of water in the oven!
